If I could indulge in a single breakfast item every day for a year, I would be utterly content with a hot-off-the-skillet French toast topped with fresh strawberries and a good helping of pure Canadian maple syrup. Yup. C'est vrai! Could be the French teacher in me but I love me some French toast. Miam, miam! Here we are, surviving the first week of our favourite time of year - Back to School. If only you could hear the lack of enthusiasm in my voice. It's one thing to have to worry about packing school lunches and waking up early but, as a teacher, it's something even more difficult to head back at work at the same time as the kids. And after all of the summer fun we've had the past few months, this year has been harder than ever before. There have been a lot of changes in our school, the most drastic being the retirement of my teaching partner and dear friend. With all of the hustle and bustle of taking the kids to daycare, supervising nearly one hundred kindergarteners in their new playground and traveling between eight different classes, I have to be careful not to let myself get rundown. So I am making more of an effort to eat lighter, more frequent meals during the day to keep my energy up. And now, thanks to Dempster's THINS, I can cut back on the calories found in one of my favourite childhood lunches - a good ol' sandwich!

This week, my daughter returned to school and my son began junior kindergarten. It has been an exciting week but also a bit draining trying to establish a routine. While my son will still have lunch at his daycare, we still need to prepare a snack for him and a full lunch for my daughter. Truth be told, my husband usually takes care of that. And since I'm being honest here, we don't do a very good job of planning out our meals. This makes meal prep a little more stressful than it should be. While a part of me would much rather avoid planning our meals altogether, I know it would be smarter, much more efficient and less costly to prepare a shopping list and meal ideas well in advance. When it comes to making lunches, I almost always resort to making sandwiches since they are fairly easy to prepare. But there have been times when I open the fridge door and I'm all out of deli meats and there isn't a can of tuna to be found anywhere. Yikes!

If there is one thing people should know about me, it would be that I am very particular about the food I eat, how it is prepared and the way in which I consume it. It is one of the reasons why I would rather choose to make my own breakfast even when my husband offers to make it for me. I need my eggs cooked just so, with a hint of salt, and a nicely toasted slice of bread or half a bagel. I do not want an egg covered in salt next to a bagel that has been slathered in butter. Nor do I enjoy eating a burnt piece of toast. The problem with our old toaster stems from the fact that my husband and I were constantly adjusting the dial to our individual preference, making it hard to get a consistent shade. Thankfully, Dempster's sent over a new state-of-the-art toaster that toasts bagels to perfection.
